With a combined 40 years in the restaurant industry, it was expected that the brainchild of Jill Buchanan and Matt Janke would be magic — and they did not disappoint. In 2010, they opened their restaurant, Lecosho, which is Chinook for “pig.” The menu is European-inspired and celebrated for its use of local and sustainable meat and produce.
