Señor Carbón Peruvian Cuisine specializes in Nikkei cuisine, a unique fusion of Peruvian and Japanese flavors. Throughout the menu, you can see dishes like salmon in ponzu sauce with roasted sesame, pork adobo, chupe de langostino, and colorful sushi platters. Joe Tuesta and Imelda Diez-Tipa began Señor Carbón Peruvian Cuisine after hosting sold-out pop-ups in Seattle’s Roosevelt neighborhood. Joe with years of culinary experience since the 2000s, and Imelda with a degree in hospitality administration, make a perfect team in bringing Nikkei and traditional Peruvian cuisine to Seattle.
