Evolve Chocolate + Cafe

Evolve Chocolate + Cafe is owned by “laughing wives” Shannon and Christy Fox. They started Evolve on the top floor of Village Books in Fairhaven where regulars can find creative meals made with love — and local ingredients. Customers will browse for books before buying a coffee, some chocolate, and sitting down to read or study. Now, they have a location downtown Bellingham called Evolve Espresso + Provisions with grab and go food, coffee, wine, and cigars.
