Kirin Chun and Luca Sacchetti opened Fortuna in 2025 to bring authentic Italian schiacciata sandwiches made with carefully selected premium ingredients to Seattle’s Phinney Ridge neighborhood. After meeting seven years ago at El Gaucho, where Kirin served as Executive Chef, the duo traveled to Italy to visit Luca’s mother and fell in love with Italian sandwich culture. Partnering exclusively with Bakery Nouveau’s William Leaman to create authentic schiacciata bread (a thinner, crispier alternative to focaccia), Fortuna serves seven daily sandwiches: five meat-based options featuring imported capicola, mortadella, and prosciutto, plus tuna and vegetarian selections. Each sandwich contains no more than five ingredients, keeping the focus on quality imported meats and cheeses. Fortuna offers a casual neighborhood spot where guests feel like they’re coming home while enjoying authentic Italian sandwiches crafted with expertise from Kirin’s extensive culinary background and Luca’s Italian heritage.
