Kabba's Kitchen
Kabba Saidikhan opened her namesake Senegalese and Gambian food truck in Portland, Oregon in 2019.
Originally from Senegal herself, Kabba moved to the United States in the late ’90s and decided to open up her own truck at the urging of friends. Today, Kabba’s Kitchen offers a wide variety of dishes bound to hit the spot, including fataya (flaky, savory meat pies), nems (a popular fried egg roll snack in West Africa), niambi ak ndiebe (black eyed peas and cassava in tomato sauce), and dibi (a plate of lamb with onions or grilled chicken served with salad and fries).
