Emily Sirisup opened Nudibranch Coffee in 2026 to bring Seattle’s first Thai coffee shop to Capitol Hill. As a Thai-American, she proud of the way cafe culture is moving forward in Thailand and wants to share it with her hometown of Seattle. Emily felt displaced from her culture while working as a barista, so she partnered with co-founder Cole Arnesen to bring Thai coffee beans from Chiang Rai, sourced through direct farmer relationships and roasted locally by Kuma Coffee. Nudibranch serves specialty drinks like Tangerine Americano, Jasmine Latte, Butterfly Pea Matcha, and Milo Mocha alongside Thai-inspired pastries. Beyond delicious coffee, the whimsical space hosts latte art classes, guest chef nights, art showcases, and craft workshops, creating affordable opportunities for Seattleites to connect and explore Southeast Asian culture.
