Krystal Graylin and Lucy Kong opened Offline Coffee Co. in early 2026 to create a Chinese-inspired cafe that feels like a cozy living room in North Capitol Hill. The two UW alumnae drew inspiration from Chinese cafes where you feel like you’re entering the owner’s living room, Offline Coffee Co. serves specialty drinks with Chinese-inspired flavors like osmanthus, black sesame, and Chinese sour plums, alongside matcha with colorful fruit purees, cold brew with decadent foams like yuzu maple mont blanc, and light eats. With secondhand furniture, lantern lighting, shelves stocked with local pottery, and an InCiardi mini print vending machine, Offline Coffee Co. hosts events, live music, art pop-ups, and community gatherings.
