Rex Ray and Meredith Monroe, two animal rights advocates, pizza lovers, and long-time vegans, saved Pizza Pi from closing in 2015. Under Ray and Monroe’s ownership, the pizzeria has remained meat-free and uses a rice-based “mozzarella” to craft delicious pizzas, aimed at encouraging more folks to try veganism.
