Shiki
Master Chef Kenji “Ken” Yamamoto and Etsuko Yamamoto opened Shiki in Seattle’s Uptown neighborhood in 2001. Before opening his restaurant, Ken trained at restaurants across the United States and holds multiple culinary licenses. Ken is one of the few chefs in the U.S. with a teaching license for fugu (pufferfish) and Shiki is one of the few restaurants in Seattle that serves the delicacy.
