St. Sauver and Curt Waller opened The Dandy of King Street Crossing in early 2025 to bring their signature warmth and hospitality to Pioneer Square. Encouraged by the success of their first restaurant, The Coupe & Flute, the wife-and-husband team created another elegant space that feels like an extension of home: cozy, warm, and sophisticated with art deco bird wallpaper and an old-world sensibility. The Dandy showcases bold Middle-Eastern and South-Asian flavors through world pantry-inspired small plates like vindaloo meatballs and ricotta gnudi in masala curry, perfectly paired with champagne flights, craft cocktails, and an impressive wine selection. The Dandy is open for post-work lingering and celebration alike.
