Emily Kim and Heather Hodge founded The Pastry Project in 2019 to make pastry education and job opportunities accessible to individuals facing barriers in traditional culinary paths. With a mission to “Have fun, do good,” they offer a free 20-week baking & pastry training program and partner with local bakeries and baker-employers to place graduates in meaningful roles. In their Pioneer Square space, they’ve grown from offering pastry-kit subscriptions and classes into a walk-up bakery window where you’ll find cinnamon rolls, crème brûlée croissants, maple pancake croissants, seasonal upside-down fruit cakes, and savory items too.
