Founded by José Garzón and Stefanie Hieber in 2024, Bad Chancla is a Capitol Hill sandwicheria celebrating millennial immigrants and first-gen Latinx Americans. While chef José and Stefanie are well-known for the two year residency of their Garzón’s pop-up at the Black Cat bar, Bad Chancla is their first dedicated restaurant, which blends Latin and American influences with dishes like the Dominican riki taki sandwich and a playful “fake” Cuban sandwich. The duo drew inspiration from Miami, Hawaii, Portland, and Las Vegas for a unique pan-Latin/American concept. Bad Chancla’s all-electric kitchen serves lunch and dinner, offering bodega-style sandwiches, rice bowls, fresh juice, and cold sides, emphasizing tradition over rigid authenticity.

Fun fact: Prior to becoming a chef, Jose was a professional musician from Ecuador, who toured South America and eventually played with a punk rock band in Washington.
