Mickey Hornick and Jo Kaucher opened The Chicago Diner after working together previously, and promising to find each other and open a restaurant some day. The pair wanted to create the typical American diner experience, but with veggie burgers instead of hamburgers. Chicago Diner is serving up diner-style comfort food without the meat, but Mickey and Jo’s menu is so delicious you’ll never miss it.
