After immigrating to the United States from Mexico, Artemio Coria Diaz picked tomatoes and washed dishes before enrolling in community college and attending culinary school with the dream to one day open a restaurant. In 2014 with the help of his wife Leticia, he opened El Cabrito a food truck featuring Oaxacan cuisine. In 2020, they opened a brick and mortar restaurant in Burien, featuring the same made-from-scratch recipes.
