In 1978, Dave and Connie Parker opened the first Flying Pie Pizzeria in Boise, Idaho. Fast forward 20 years — in 1997 their daughter Kathryn Parker stepped up to the plate to carry on the family tradition in Issaquah, Washington. The rest is history! The pizza dough and sauce at Flying Pie is still made with the secret family recipe that features Pendleton flour and fresh-packed pear tomatoes. They import their Italian sausage and pepperoni, as well as their bakery sub rolls. You’ll be delighted to know that they have vegan and gluten free pizza choices that feature soy cheese made fresh in Oregon city!

Pro tip: Stopping in for the first time? If you’re not getting a pizza, try a “zappi” (calzone) or a hot Italian sandwich!
