Long time food writer and restaurant consultant Jennifer Johnson is concerned that, in the restaurant industry, “healthy eating” has become synonymous with “expensive eating.” Wanting to offer her community a more affordable healthy option, she opened her vegetarian-focused cafe, Happy Belly. The cafe boasts a long menu (and to-go fridge!) stocked with yummy sandwiches, soups, salads, rice bowls, wraps, and more. Not to mention, there’s a full coffee and juice bar and kombucha on tap!
