Chef and owner Mutsuko Soma, a Level 3 sake sommelier, returned to her roots to bring Seattle traditional soba noodles. While in Japan, Chef Soma discovered that Washington is one of the largest US producers of buckwheat, the staple soba ingredient–good news for Kamonegi, and for diners!
