New Mexico Tamale Company

Dora Ruiz built up New Mexico Tamale Company by selling tamales at farmers markets, community events, and a high-traffic corner in Birch Bay. In 2017, New Mexico Tamale Company set up its first physical location before settling in a their current space in Bellingham in 2021. Dora’s tamales are available on a first-come, first-serve basis because they are all made fresh daily with no large machines. At New Mexico Tamale Company, everything is lard, shortening, and gluten-free, filled generously, and 100% made from scratch.

Fun Fact: Dora recreates her mom’s flavors that she grew up with like Hatch Chile. She’s received multiple awards for her flavors!
