After taking over Kiosko Coffee in summer 2019, Rojelio and Lindsay Landaverde decided a name change was in order: they rebranded as Pajaro, a low-impact, low-waste, and fully organic vegan cafe serving espresso classics and a selection of plant-based pastries. Their drinks are made with locally-pressed plant and nut mylk alternatives and all-natural sweeteners like dates and maple syrup.
If you’re cutting caffeine, try one of their herbal and mushroom based coffee alternatives. Their most popular drink is the Horchata de Hongo, made with sprouted brown rice, coconut milk, ceylon cinnamon, and mushrooms.
