Pancita is a Mexican pop-up-turned-permanent concept at the former Pair restaurant in Ravenna. Chef Janet Becerra’s culinary education and experience had been dominated by European influence, and she wanted to create something different to honor her family and her culture.

Pair owner, Sarah Penn, needed to save her restaurant after the pandemic, and when she couldn’t find a chef to take over her concept, she decided to host pop-ups and considered finding the right fit to create a new concept entirely. Pancita At Pair was the 5-month pop-up, which became permanent and shortened to just Pancita after immediate and ongoing success. Sarah continues to own and operate the business side of the restaurant, while Chef Janet keeps customers coming back with her house made tortillas, tamales, and more.
