If you’re wondering, it’s pronounced “peen-cho.”
Pintxo is a basque word that refers to skewered foods and tapas, and Cory and Amanda Chigbrow’s restaurant serves some of Belltown’s best. Operating out of a micro-kitchen (smaller than most food truck kitchens), Pintxo serves a selection of traditional tapas and modern takes on dishes from a variety of regions throughout Spain. As per the Spanish tradition, the perfect combination of food and hospitality make Pintxo a wonderful nourish relationships new and old.
