Xenos Nair is bringing his take of Aussie fish and chips to the Pacific Northwest at Salty Blue Fish + Chips. Although Xenos was born in the Fiji Islands, he spent a lot of time in Australia and New Zealand, and he wanted to replicate the flavors he experienced there. At Salty Blue Fish + Chips, everything is made to order in a relaxed and fun atmosphere. Xenos imports the fish, serves the fish in filets, and make their seasoning (including chicken salt) from scratch, all as a nod to Australian fish and chips.
