J.P. Lertsirin always found it odd Seattle has barely any spots dedicated to the art of rice porridge, so in 2020 he set up shop in a Wallingford commissary kitchen and opened Secret Congee. J.P.’s congee always turns out beautiful and thick topped with organic meats, sustainable seafood, and/or fresh vegetables. Secret Congee’s dishes are authentically influenced by the South East Asia style of cooking, which comes with a variety of creative toppings and ingredients which bring out hidden delicious flavors and aromas.
