Shiro’s Sushi originally opened in 1994 by master sushi chef Shiro Kashiba — a former apprentice of Jiro Ono of “Jiro Dreams of Sushi.” In 2014, he passed the torch to Yoshi Yokoyama who now runs an elite team of sushi chefs who have mastered “Edomae” sushi preparation popularized by Shiro himself. Shiro’s Sushi is famous for its use of classical Japanese technique with local PNW seafood, establishing the Belltown restaurant as a culinary institution in Seattle.
