After losing his grandmother to cancer, Eddi Vinh Vi opened Sprout Cafe, determined to spread his passion for the healing powers of healthy food. Transitioning his parent’s restaurant to a grab-and-go New American spot, Eddi is determined to bust the stereotype that healthy food is reserved for slow-service, expensive spots. The salads and sandwiches are particularly friendly for vegetarian and vegan eaters — but the recipes are reputably friendly for those unfamiliar with that lifestyle, too. Whether you’re trying some of their magical tofu or opting for seared tuna, all dishes can be customized to perfection.
