The Taste of Samoa of run side-by-side by Ed Leota and his uncle Ron Manning. Ed handles the kitchen while Ron runs the business side of the food truck. Originally, Ed and Ron ran Tast of Samoa as a storefront, but when COVID-19 came they adapted and opened the food truck. They are serving up their signature Samoan taco creation. Instead of a tortilla, they flatten the dough used to make their manapua and fill them with Samoan-style corned beef called povi masima and turkey “phat” (tail). Ed also cooks up a rotating selection of other Samoan favorites, like half-moon pies.
