Harold Fields is putting his spin on Japanese street food at Umami Kushi inside Métier Brewing. Umami Kushi is known for their okazu pan — a fried bread stuffed with a savory filling — but Harold also serves other classic Japanese foods like yakitori. In 2009, Harold brought his love of Japanese street food to Seattle after being introduced to the wonders of the curbside cuisine in Tokyo. Odds are, you’ve probably seen his okazu pans all over the city and beyond at places like Umami Kushi’s Rainier Beach location, and inside The Station and Seattle Fish Guys.
