After their favorite vegan restaurant in Tacoma closed, Nancy Parkison and Rich Baker teamed up with Paco Hernandez, the shuttered restaurant’s head chef, to open their own plant-based eatery: Viva Tacoma.

Paco built Viva Tacoma’s menu to be completely organic and gluten free, in addition to vegan. Customer favorites include stuffed portabella mushrooms, eggplant lasagna, and cauliflower “wings.” The trio all believe love and compassion are essential ingredients to creating feasts for the eyes, palate, and soul and that nutrition is the key to health.
