Seattle chef Taylor Cheney treasured the Middle Eastern recipes she learned during her time spent cooking and living in Jordan, Turkey, Lebanon, and Egypt. In the spring of 2019, Cheney opened her walk-up restaurant, Yalla, which roughly translates to “let’s go” in Arabic. Yalla serves saj wraps made with tender lamb, chicken, and beef or labneh, za’atar, and spinach.
