Aldo Góngora, his wife Angelica, and sister-in-law Roxana Martin are passionate about preserving traditional corn seeds by creating, eating, and spreading non-GMO heirloom corn. In 2021, they opened Maíz in a tiny space at Seattle’s Pike Place Market. The menu features classic recipes of sopes, gorditas, tamales, and tacos with their house-made nixtamalized masa.
Building on their success, Maiz Molino in Belltown offers a more spacious dining experience, including lunch, dinner, and weekend brunch.
